Cherry Energy Balls

I actually bought my food processor to specifically experiment with creating different versions of energy balls with dates and walnuts. This is the first one I test out, and it turned out perfect. Although I love energy balls with peanut butter, but they do end up all tasting the same, so I wanted to see if there were more flavors to explore.

I like to quickly grab one of these before an early morning workout, so I try to keep any type of energy ball ready in the fridge at all times. This recipe is perfect for just that or even a quick snack in the morning or afternoon.

I order dried cherries every other month on our Amazon subscription order and find so much use for them. This particular brand of cherries is pricey but there is a lot. These are bigger than some of the ones found in the store and are not too dried out. For this recipe, make sure what ever dried cherries you are using are big and have some moisture.

As far as the dates go, make sure they are not too dried out either; I also buy our dates on our Amazon subscription order every few month. To add more moisture to the dates (or even cherries), just soak in a bowl of water for 10-15 minutes before putting them in the food processor.

Ingredients:

  • 1 cup dates
  • 1 cup dried cherries
  • 1 cup walnuts
  • 1/2 cup ground flax seed
  • 1/2 cup coconut oil

Yields: 14-16 balls

  1. Melt coconut oil into a liquid consistency – microwave for 30 seconds
  2. Combine all ingredients in food processor.
  3. Use high setting to evenly chop ingredients – even with a brand new food processor, this still took 7-8 minutes to chop everything evenly.
  4. Remove blade from food processor and roll mixture into balls within hands.
  5. Keep refrigerated.
