Pepper Poppers

This snack or appetizer is so easy that I feel like it is not even worthy of a blogpost! I made two different versions this week that I thought I wanted to share. Before I start, I have to admit that I have had our Holsem Air Fryer a few years ago. I had only used it once and stuffed it in the corner of a cabinet to collect dust. A close friend of mine mentioned a few recipes with Laughing Cow Cheese and bell peppers that sounds like a treat my husband and I would love. Apparently in my mind, I mixed her two recipes and created my own; a typical move on my part because I am awful at following recipes or instructions. Long story short: this inspiration brought out my air fryer for the first time in years and these peppers were worth it.

I am excited to continue to play around with this recipe since there are so many different flavors of this cheese and so many different spices you can add too. Bacon is also calling my name to wrap these peppers in!

Version 1: Colorful Everything But the Bagel Peppers

Ingredients:

  • 2-3 red, yellow or orange bell peppers
  • 4-6 light plain Laughing Cow Cheese (or similar brand)
  • Everything But the Bagel seasoning (from Trader Joes or Aldi)
  1. Cut and deseed bell peppers into 4-6 pieces per pepper (about an 1-2 inches wide)
  2. Divide each cheese in half and spread on each pepper – 1/2 slice of cheese wedges per pepper slice

3. Place in air fryer at 400 degrees for 10-12 minutes – check to make sure they are as toasted and soft as you desire.

4. Remove, cool, and enjoy!

Version 2: Pepper Jack Pepper Poppers

Ingredients:

  • 2-3 green bell peppers
  • 4-6 Pepper Jack Laughing Cow Cheese (or similar brand) – garlic and herb flavor would be perfect for those who don’t love spice
  1. Cut and deseed bell peppers into 4-6 pieces per pepper (about an 1-2 inches wide)
  2. Divide each cheese in half and spread on each pepper – 1/2 slice of cheese wedges per pepper slice

3. Place in air fryer at 400 degrees for 10-12 minutes – check to make sure they are as toasted and soft as you desire.

4. Remove, cool, and enjoy!
